- Olive oil·
- One grated carrot·
- Springs of onion (chopped)·
- White Quinoa (may use red, black, or blend instead)·
- Vegetable broth or mushroom broth·
- Soy sauce· Pinch of white pepper·
- Roasted tofu or raw tofu·
- Broccoli florets·
- Lime juice·
- Sesame oil·
- Fresh cilantro or coriander·
- White sesame seeds
Heat up your frying pan with a little olive oil over medium high heat. Add grated carrot, chopped onions, and sauté in the olive oil. Stir and cook until vegetables are soft.
Add quinoa to pan and stir for a minute to coat the quinoa with vegetables and oil. Add vegetable broth to pan and let it come to a boil. Add a little bit of soy sauce and a pinch of white pepper and give it a little stir. Cover pan, turn the heat down to low, and let it simmer for about ten minutes.
Uncover the pan and lay roasted or raw tofu on top. Add broccoli florets and tuck in between tofu, cover the pan, and let it cook for 10 more minutes. Uncover the pan to pour a little bit of lime juice and add a drizzle of sesame oil.
